The person who molds and makes pots and figures from molding clay. What are they called?

What type of clay are you talking about
Molding clay Sometimes clay can be used but a lot of times a slip is created and used in a plaster mold the process is ceramic casting.
Modeling clay – quite often could use a oil based clay like plasticine
the oil based clay never dries or hardens but modeling can be done with the other clays.
Earthen ware – normally a terracotta , reddish, low fire
Stoneware can take a higher firing
porcelain is reasonably high fire.and very fine grain.
A clay is normally chosen for how you will work it and how you want the finished piece to be.
I normally use a high fire stoneware. I am starting to use porcelain.
I have used the plasticine for some sculpture involving mold making.
